Peru
Peru is a fiesta of tastes, cultures, and history. A country of contrasts, the geography splits into the Andean sierra (mountains), the jungle, the altiplano, and the arid Pacific coast with over 84 microclimates.
Peruvian cuisine also happens to be one of the world’s anchor cuisines with influences ranging from indigenous to the imported cuisines of the Spanish colonists and later waves of Chinese, Japanese, and West African immigrants and a myriad of ingredients that reflect its diversity.
The capital city, Lima, is the hub of fine dining home to several of the best restaurants in South America–and the world. It’s a place where modern highrises are neighbors with 3,000 year-old ruins and colonial viceroyal palaces. Inland, high in the Andes, Cusco and the verdant Sacred Valley was once the seat of the Incan empire and Spanish colonial power, equivalent to Rome in its day. Turning to the southern highlands of Arequipa and Lake Titicaca, the sky high lake is quite possibly one of the most beautiful places on earth. Still highly agricultural, much hasn’t changed in 500 years as patchwork fields are sown with fava beans and villagers still don colorful traditional garments. Arequipa, the bella white city known for its spicy dishes, is heaven with its mild climate and handsome European architecture.
The green “lung” of the world, the mighty Amazon is also one of the largest regions of Peru and untouched corners on our planet. The jungle is teeming with wildlife, indigenous cultures, exotic fruits, vegetables, and fish. It’s truly an adventure into the unknown deep reunion with nature.
